It is said that to grow good coffee, you need an altitude of 1000metres and approximately 3 metres of rainfall a year. While The Summit is almost the right altitude at 920 metres, it doesn’t get the rainfall.
Of course, the low rainfall has not stopped Jim Baxter from setting up a coffee roasting business at The Summit. After he retired from teaching, he went into the coffee roasting business. Jim buys the best beans from Columbia, Brazil and PNG, which he blends and roasts to make an excellent coffee to drink.
